Co-op ups its takeout game

Large Le Creuset braising pots (in the bright cherry colour) are set out on hot pads to keep their contents warm. They’re filled with braised short ribs, slabs of thick and shiny meat loaf, hunter chicken in a creamy sauce, mashed potatoes and more. A chef opens an oven door and the rich scent of applewood-smoked bacon issues forth. A second chef pulls long, hand-stretched pizzas from a different oven and loads them onto stylish maple cutting boards. Along one side, an international array of salads provides a tempting display, while at another station, a curry bar offers butter chicken, tikka masala and chicken vindaloo. Meanwhile, Simple Simon soups steam in large pots and fresh-boiled and baked bagels wait, ready to be made into sandwiches. Across the room, a huge coffee roaster dumps a batch of hot Colombian beans into its cooling bin, the aroma of roasted beans doing battle with the smoked meats.
What is this? A new restaurant or deli? A funky joint on 17th Avenue perhaps?
Nope — it’s Fresh To Go, a new dine-in and meals-to-go concept from Calgary Co-op.
